Winemaking: Grapes we de-stemmed by hand (!) and then fermented in fibreglass and stainless steel tanks. No filtration, fining or added sulphur. The wine was bottled with 5g of residual sugar so over the summer it will become fizzier due to re-fermentation. Only 2500 bottle produced.
This Wine: In May 2020 this wine had just a hint of fizz and some residual sugar making it off-dry. Very juicy with a real, deep hit of red cherry. Will be interesting to see how it progresses through the summer. Delicious as an aperitif or a desert that isn't too sweet.
Notes on the Winemaker: Dido and Jurriaan hail from the Netherlands and travelled the world learning winemaking before settling right in the North of Catalunya not far from the French border. They crowdfunded their vineyard purchase and are now on their 2nd vintage making wine that is full of joy. We visited in 2019 and listened to records in their winery whilst tasting samples. Each cuvee has a different reference to one of their favourite musicians.
