Winemaking: Pinot Gris grapes from a neighbour were purchased after they had had extended time on the vine (with some early stages of noble rot). The grapes were pressed and underwent a slow fermentation for a year in old oak barrels. Bottled under crown cap with 30g of residual sugar. Some CO2 gas remains in the bottle to keep the wine being too heavy and sticky.

This Wine: Natural sweet wine with a hint of uplifting CO2. The noble rot has created some added layers of complexity. This cuvée will never be made again so get it whilst you can.

Notes on the Winemaker: Morgane from Burgundy and Christian from Australia are the duo behind Domaine Dandelion near Saint-Romain in the Côte de Beaune, Burgundy. They work 2.2 hectares of Aligoté, Gamay and Pinot Noir vines by horse or hand. Organic and Biodynamic techniques are used in the vineyard and nothing is ever added to the wines. The labels are made at an old paper mill and include pressed flowers.
