Winemaking: Organic Chardonnay grapes from a single plot of vines grown on volcanic soils were harvested by hand. Whole bunches were pressed into barrels (30% of which were new) where fermentation with indigenous yeast took place. No fining or filtration. Very small amount of sulphur added on bottling.

This Wine: Natural white wine with a medium to full body. The roundness is complemented by fresh acidity. Citrus flavours dominate (orange and lemon) with a touch of stone fruit for support and a lovely mineral finish. There is an influence of oak which adds to the complexity. 

Notes on the Winemaker: Patrick Sullivan and his wife Megan produce wine in the rural region of Gippsland, Victoria. In the UK, he generated a real buzz for himself with the fun and accessible Jumpin' Juice project but in recent years he has been producing more and more serious and complex wines that offer intriguing glimpses of this magical, Australian terroir. He dedicates most of his time in the vineyard to help his fruit reach its highest potential which then allows a more hand off approach in the winery.
