Winemaking: Hand picked grapes were fermented with indigenous yeast in stainless steel. Aged a further 6 months in tank. No filtration, fining or added sulphur.
This Wine: Zippy and fresh with citrus fruit with floral notes.
Notes on the Winemaker: Ramón Saavedra has plots on the North side of the Sierra Nevada mountains in the villages of Cortes and Graena. You might expect wine from a region as warm as this to lack freshness but the altitude of 800-1000m takes care of that. We visited him in 2017 to taste in his tiny winery. He is such a warm and welcoming character and his wines are great too!
