Winemaking: Grapes grown with biodynamic practices (uncertified) in calcareous clay. Hand harvested before cold maceration. The juice of the Mandó and Xarel Lo spends 14 days with the skins. Spontaneous fermentation with indigenous yeast in stainless steel tanks. Aged for 2 months in old wooden barrel. No fining, filtration or added sulphur.
This Wine: A natural wine made from a blend of red (Mandó) and white (Sumoll, Xarel Lo) grape varieties which results in a refreshing, light red wine that is perfect from the fridge on a sunny day.
Notes on the Winemaker: Ramon Jané is one half of the esteemed Cava house Mas Candí but this wine comes from his solo project that he started in 2019 which promises some of the most exciting natural wines of Europe.
