Winemaking: Organic Chardonnay grapes were purchased from an organic grower. 50% underwent direct press whilst the rest spent 3 weeks on skins. Fermentation with indigenous yeast. and age din tank until the following Spring. Juice from the original harvest was then added again to the wine to kick start a second fermentation. Bottled before this process was complete in order to create fizz in the bottle. No filtration, fining or added sulphur.

This Wine: Natural sparkling wine at a great price! Stone fruit and and surprising aromatic profile is supported by a nicely textured body from the maceration. Easy going with a fresh and mineral finish. 

Notes on the Winemaker: Alex Della Vecchia makes natural wine in the Dolomite mountains in northeastern Italy. There is a long tradition of sparkling wine in this part of the country and this is something Alex wants to preserve. Col Fondo style wines with skin contact techniques and no additions. He works 4 hectares of vines and also purchases organic fruit from neighbouring growers.
